For all of us that love a good plate of pasta, here is a quick and easy recipe that is excellent right out of the skillet or (as with all good pasta dishes) even better the next day! You can make this with or without meat. If you are making it without meat, you will want to follow the vegetable option. To make it Keto-friendly, use Zoodles (zucchini noodles).

Ingredients

  • 1 – 12 oz. package of gluten-free pasta or Zoodles (zucchini noodles – which is my preference)
  • 1 medium onion, diced
  • 1 cup mushrooms, diced
  • 1 lb. ground meat (I have used beef, turkey, lamb and even shredded leftover roast)
  • 2 cups of tomatoes, diced
  • 1 – 7 oz. jar of tomato paste
  • 1 cup vegetable broth

Vegetable only option

Omit the meat and add the following:

  • 1 additional cup of mushrooms, diced
  • 1 cup zucchini, diced
  • 1 additional cup tomatoes, large chunks

Spices

  • Salt and Pepper to taste
  • 1 TBSP Italian seasoning
  • 1/2 tsp garlic

Directions

  • Cook the pasta (or Zoodles) according to package instructions and set aside
  • In a large French skillet, over medium-high heat, sauté the onions and mushrooms until tender
  • Remove from skillet
  • Turn the heat down to medium, add the ground meat to the skillet and brown
  • Season the meat as it cooks with the salt and pepper
    When the meat is browned through, add the onions and mushrooms back into the skillet
  • Add the tomatoes, tomato paste, vegetable broth, the remaining spices and stir
  • Drop the heat to low and put a lid on the skillet; simmer for about 30 minutes
  • Top over your favorite pasta (or Zoodles)
